Farmed Scallop, live, product of Canada.
Harvested on the coast of the Great Bear Rainforest in northern British Columbia. These delicious scallops, species Patinopectin Yessoensis have been selected over several generations for flavor and presentation. Approximately 2.5 scallop per lb and packed in 40 lbs master styro, with a 10 % overpack (44 lbs gross product) the Great Bear scallop has great potential for both retail and food service.
Results from cutting:
- 5 lbs (2.27 kg) live inshell scallop was 13 animals yielding .66 lb of meat or 10.65 ounces (300 grams)
- meat to shell ratio 13.4%
- Meat 20 to 22 pieces per lb (454 grams)
