Thanks to this innovative growing technique, Mac's Oysters Ltd. can offer you a premium oyster that remains in Winter Condition all Summer Long. Mac's owns and operates the original Summer Ice lease in Jervis Inlet, a deep water mountainous fjord in British Columbia.
The cold waters in which the Summer Ice are stored from May to October keep this oyster from spawning like its shallower grown cousins.
